Last night we had my husband’s version of chicken cacciatore, a classic Italian dish, for dinner. This was the perfect no fuss meal for a chilly day. It cooked in the oven while the girls and I were planning for the upcoming holidays. When we were done, the meal was ready to come out of the oven. It was as simple as that.
I love when my husband, Giuseppe, has the day off from work. He spoils me by cooking dinner. Last night he made a tomato-based sauce with mussels and scallops. He served it over some spaghetti. I added a nice glass of vino and lit some candles. We spent a romantic evening at home together. It was the perfect way to pass an autumn night.
